Looking for a simple fish dinner? Try this easy recipe for baked fish fillets. You can use any firm white fish: cod, haddock, or grouper work well. This baked fish recipe is almost fool-proof. For someone who does not cook often, this recipe was perfect because it was simple and easy-to-prepare. Instead of dotting the butter, I melted the butter and mixed it with Old Bay seasoning, garlic powder, sea salt, pepper, dry parsley flakes, and dried thyme. I brushed this mixture onto each of the fillets and added two lemon slices on top of each. Then, I topped each one off with some fresh lemon juice. The tip I always follow to get the most juice out of a lemon is to microwave it for about 15 seconds and apply pressure by rolling it before cutting length-wise for juicing. I covered the fish and baked it 375 degrees for 25 minutes, and it came out tender and delicious. Instead of frozen vegetables, I opted for fresh asparagus tossed in a mixture of extra-virgin olive oil, minced garlic, salt, and pepper. The garlic-roasted asparagus was baked in the oven on a separate pan for about 15 minutes.
For an even healthier version of this recipe, I would suggest replacing the garlic salt with fresh minced garlic and sea salt and using extra-virgin olive oil instead of butter. Additionally, you could use fresh herbs instead of dried ones since this recipe has a short cooking time. Compare to their dried counterparts, fresh herbs can provide greater levels of antioxidants and other nutrients. Other types of fish may also work with this recipe, including flounder or cod. Tilapia may be one of my favorite types of fish, but it is not the highest in omega-3s and other nutrients. Farmed tilapia, compared with other fish and even wild tilapia, contains smaller amounts of omega-3s. However, eating baked tilapia and asparagus is probably a better choice for a healthy heart than eating a bacon double cheeseburger with fries, so it will continue to be in my meal rotation nonetheless.

Ingredients: 

4 salmon fillets (6-8 ounces each), frozen or thawed
2 teaspoons liquid smoke flavoring*
Freshly ground black pepper
Lemon pepper seasoning
Salt
Freshly-squeezed lemon juice, optional
Serving suggestions: cooked rice, potato wedges, and a green vegetable or salad

Instructions: 

1. Preheat oven to 425 degrees. Line a baking sheet (with sides, to catch drippings) with foil. Place a wire rack (I use a wire cooling rack) on the foil-lined sheet. Place salmon fillets on wire rack, a few inches apart.
2. Season both sides of the salmon fillets with a thin coating of liquid smoke flavoring, some freshly ground black pepper, a sprinkling of lemon pepper seasoning, and some salt. Squeeze fresh lemon juice over, if desired. If you're using good salmon that was properly cared for/processed (and doesn't smell "fishy"), feel free to skip the lemon juice. :) If your salmon has skin on one side, place it skin-side-down and just season the top.
3. Bake salmon on wire rack/baking sheet in the middle of the oven for about 15-20 minutes (thawed) or 30-35 minutes (frozen). Salmon is done when the flesh flakes easily with a fork and internal temperature is 145 degrees.
Serve with hot rice, salad, and/or a green vegetable
