I had some
Whiting fish (pronounced why-ting) and I wasn’t too sure what to do with them
since I normally just cut them up and add it to soups like egusi or maybe efo riro as the case may be. I thought for a while and
decided frying would be the other best cooking route for the fish. I usually
don’t espouse fried foods, but this fish is best either when fried or cooked in
a soup.
If you’ve
never had Whiting, it’s very similar in smell to Titus fish; with regards to
taste, it’s relatively bland unless you douse it in a lot of seasoning. For
Nigerians, if you’ve ever wondered what the small fish added to the soups/stews
at Nigerian restaurants, I have a strong feeling that it’s Whiting fish (I
always wondered myself).

This is a
pretty quick and easy recipe. To learn how to cook fried whiting fish, here’s
what you’ll need:
Ingredients:
2 Whiting
fish
1 egg
1/2 cup all purpose flour
1 tsp Adobo seasoning
1 tsp ground red pepper
Dash of salt
Canola oil

Method:
1. Clean
and rinse fish, set aside.
2. Break
egg into a bowl, add salt, beat well and set aside. In another bowl, add flour
and seasonings, mix together, set aside.
3. Cut
both fish into 4 four parts each.
4. Remove
fins.
5. Preheat
oil in a deep pan/fryer till very hot (enough to cover the fish). One at a
time, roll fish around in egg, then cover with seasoned flour (repeat this step
twice for each cut of fish).
6. Once
oil is very hot, add coated fish to pan/fryer. Fry for about 10 minutes or till
golden brown (if the oil isn’t hot enough, it might take longer).
7. Cover
a plate with a paper towel. Set fried whiting fish on plate to drain excess
oil.
8. Transfer
to a clean plate.
It wasn’t too
crunchy which was good, because I don’t like crispy fried foods (blame it on my
sensitive teeth!). If you want yours crunchier, add some baking powder or try
using Panko bread crumbs. The fish was moist on the inside and also
had the right amount of heat to saltiness. Tasty! You don’t have to cut it up
into four pieces each either, you could fry it whole or cut it in half, totally
up to you!
You could eat
this alone as a snack, with beans and some soaked garri, with jollof rice or even add it some fried stew. I wrapped leftovers in foil and put it in the
fridge. I would say you could bake it too, but I really don’t think that would
turn out too good.
Instead of
flour, you could also use a corn mix, much like Jiffy’s cornbread mix. If you’d
like, you could eat it with tartar sauce or fry up some onions, tomatoes and
half a scotch bonnet pepper and eat it with that! If you’re serving this at a
gathering, garnish with lemon/lime wedges and your favorite herb (e.g
cilantro).
